Turkish cuisine is a charming mix from Mediterranean, Arabic and Balkan cuisine.

Each region in Turkey is characterized by certain dishes and local specialties, their kitchen is inhomogeneous and varied, the same dishes can be found in different versions and with different ingredients to regions which are prepared.

Appetizers are the foundation of Turkish cuisine, often as food that can replace a meal. A typical example is "imambayalda" - vegetable dish based on aubergines , which is common in Turkish cuisine.

In Turkey, there are even restaurants that specialize in offering only appetizers.
